Bell Pepper is not necessarily a vegetable I like to eat, except when it’s stuffed with meat and cheese! This Stuffed Bell Pepper recipe is healthy yet filling and has the perfect mixture of flavors I look for in my meals – the yellow and orange bell pepper is sweet, the meat is salty, and the cheese adds a little bit of heaven in your mouth! This recipe is super easy to make and the presentation is comparable to a 5 star restaurant, your dinner companions will think you’ve slaved over the stove for hours and totally impressed. Enjoy!

INGREDIENTS
- 2 bell pepper, top cut off and seeded
- 1 lbs ground beef (ground pork, chicken, or turkey will also work)
- 1 1/2 cup of crimini mushroom, diced
- 1/2 cup of shredded mozzarella
- 1/2 of a medium size onion, diced
- 1/2 tbsp of garlic, minced
- 1 tsp of salt
- 1 tsp of black pepper
- 1 tbsp olive oil
PREP THE GOODS
- Preheat oven to 350 degree
- Cut the tops off the bell pepper, scope out the seeds, remove the white pith, and add bell pepper (including the top) into a pot of hot water, boil for 5 min to soften the bell pepper
STUFFED BELL PEPPER
- In a medium size pan, heat up oil and cook onion until softened brown, then add the ground beef, garlic, salt, and black pepper. Make sure you break up the beef until minced.
- When the beef is 80% browned, mix in the mushroom, cook for 2 min.
- Turn off the stove and mix in 1 cup of mozzarella cheese
- Take the bell pepper and place in a baking dish, and stuff bell pepper with beef mixture. The beef mixture might not all fit into the bell pepper, but that is OK, put the remaining around bell pepper in the pan, this will give some moisture to the bell pepper as it bakes. Once the beef mixture is all in the baking dish, use the remaining mozzarella to top the bell pepper.
- Bake in oven for 30 min.
