Soups and stews are the best to warm you up on a wintery night. This beef stew recipe is simple, easy, and made under an hour!
Prep Time: 10 mins | Cook Time: 40 mins | Serves: 4
INGREDIENTS:
- 1 lbs of stew meat beef cubes or beef tenderloin cut into 1” cubes
- 1/3 cup of celery, chopped
- 1/3 cup of carrot, chopped
- 1/3 cup of yellow onion, diced
- 1 quart of beef broth
- 2 tbsp of cold water
- 2 tbsp butter
- 2 tbsp olive oil
- 2 tbsp all-purpose flour
- 2 bay leaves
- 1/2 tbsp thyme
- 1/2 tbsp oregano
- salt
- black pepper
PREP THE GOODS:
- Pat dry the stew meat and season with salt & pepper
- Chop & dice the necessary ingredients
COOK THE GOODS:
- Heat up a medium size pan with the olive oil over high heat
- Once the pan is heated up, add the stew meat. Cook the meat for 3-4 mins until all sides are browned (2 min on the first side, a min for each side after)
- As the meat is cooking, add beef broth, thyme, oregano, and bay leaves into a medium size pot and heat it up
- Once the meat is browned, add meat into the broth
- In the same pan you used to brown the beef, add the butter, carrot, celery, and onion, and cook for 5 min over high heat. Salt & pepper to taste and stir occasionally to cook vegetable evenly
- Add the softened vegetable into the pot with the broth and beef
- In a small bowl, add the flour with 2 tbsp of cold water, mix the flour with the water to create a roux, and add into the broth. The roux will thicken the stew.
Let the stew cook for 25-30 min on low heat
